100% Merlot grapes
The Merlot grapes arrive at the winery in the morning following a manual harvest. After being crushed, the Merlot grapes are transferred into a chilled stainless steel tank for 2 days of cold soaking prior to the alcoholic fermentation. Upon completion of the cold soaking, the temperature is raised, yeast are added and an alcoholic fermentation at a temperature of 28℃ begins while using pump over regimes for the purpose of flavors, aromas and color extraction.
Following the alcoholic fermentation, the wine extended maceration, the grapes are slowly pressed in low pressure and transferred into a stainless steel tank for malolactic fermentation in order to stabilize and soften the wine.
Following the malolactic fermentation, the maturing processes begins in new French oak barrels and second-year oak barrels for a period of 18 months. After the bottling process, the wine continues to mature within the bottle for additional 6 months prior to release.
The Merlot grapes are harvested from a vineyard at the Samaria Mountains at a height of about 650m above sea level. This vineyard is characterized by mountainous climate conditions, mild growth intensity and significant differences between average day temperature and cool night temperature which contributes to a unique quality of the grapes which is reflected in high concentration of flavors and aromas.
